All Purpose Pizza & Marinara Sauce

Food Storage Spotlight:
I always have a jar of this in my fridge.  The ingredient list is long, but it is very quick and easy to make.  In addition to a pizza & pasta sauce, you could add a few drops of Tabasco and have taco sauce, or add some BBQ sauce and serve over chicken nuggets or breaded chicken topped with mozzarella cheese.  For an after school snack, cook an uncooked tortilla and top with sauce, mozzarella and pepperoni, then roll up.

All Purpose Pizza & Marinara Sauce
1 T olive oil
1 t minced garlic
Two 14 oz cans tomatoes (whole or chunks)
6 oz can tomato paste
1 t salt
1 T sugar
¼ t onion powder
Dash black ground pepper
1 t dried oregano
¼ t dried basil
 
Place the olive oil and garlic in a medium saucepan, sauté lightly a minute. Add all the tomatoes including  the juice, and the spices (except the oregano & basil).  Blend with an immersion (stick) blender.  Add the oregano and basil and simmer for 5- 10 minutes.
A few hints:
*If you don’t have a stick blender,  put the ingredients in a blender then pour into pan
*If you want to reduce the acidity, blend a carrot  up with the tomatoes.
*If you use home bottled tomatoes from your garden , your sauce will be even better. 
*This freezes well in a Ziploc freezer bag.
*If you want a thicker sauce, let it simmer until the sauce reduces, or next time drain some juice from the canned tomatoes.
