Sweet Breads

Pumpkin Chocolate Chip Bread

1 cup vegetable oil 1 tsp. nutmeg
4 eggs 1 tsp. baking soda
2/3 cup water 1 tsp. cinnamon
2 cups pumpkin 3 cups sugar
3-1/2 cups flour 1 cup chocolate chips*
1-1/2 tsp. salt

Preheat oven to 350 degrees. Grease 3 loaf pans 8-1/2" x 4-1/2". Combine oil, eggs, water, and pumpkin. Mix to smooth mixture. In separate bowl mix together flour, salt, nutmeg, baking soda, cinnamon, and sugar. Add to pumpkin mixture and blend until dry ingredients are moistened. Stir in chocolate chips. Bake in loaf pans one hour, or until toothpick inserted in center comes out clean.

*May substitute raisins and nuts.

Apple Cinnamon Bread

1 cup sugar 1 egg
1 cup flour 1/4 cup vegetable oil
1 tsp. baking soda 1 cup chopped nuts
1/2 tsp. salt 2 cups grated raw apple
1 tsp. cinnamon (using medium grater)
1 tsp. nutmeg

Preheat over to 350 degrees. Mix together dry ingredients. In medium mixing bowl, combine egg and oil; beat together. Add nuts and apple. Gradually stir in dry ingredients. Spoon into 1 large greased loaf tin or 2 half-size tins and bake for 50 minutes for large loaf, 35-40 minutes for smaller loaves, or until toothpick inserted in center comes out clean.



Zucchini Bread

3 eggs 1/4 tsp. baking powder
2 cups sugar 3 tsp. cinnamon
3 tsp. vanilla 3 cups flour
1 cup vegetable oil 3 cups zucchini squash
1 tsp. salt (peeled and grated),
1 tsp. baking soda 1 cup nuts

Preheat oven to 350 degrees. Beat eggs, sugar, and vanilla until creamy. Add oil and blend. Add dry ingredients to creamy mixture along with squash. Add nuts. Pour into greased loaf tins. Bake for 1 hour or until toothpick inserted in center comes out clean.



Chocolate Zucchini Bread

1 cup flour 1/2 cup white sugar
1/2 cup unsweetened cocoa powder 1/2 cup brown sugar
1 tsp. baking soda 2 eggs
1/4 tsp. baking powder 1 tsp. vanilla
1/4 tsp. salt 1-1/2 cups grated zucchini
1/2 cup vegetable oil 3/4 cup semi-sweet
chocolate chips

Preheat oven to 350 degrees. In a large bowl whisk together the flour, cocoa powder, baking soda, baking powder, and salt. Set aside. In large mixing bowl, beat the oil, sugars, eggs, and vanilla until well blended (about 2 minutes). Fold in the grated zucchini. Add the flour mixture, beating just until blended. Then fold in the chocolate chips. Baking in greased 9 x 5 x 3 loaf pan for 55 to 65 minutes or until toothpick inserted in the center comes out clean.
