At our last RS meeting we had some yummy treats. Here are the recipes:
Strawberry Brushetta
(Tanya Barkdull recipe)
20 slices of French bread - baguette
1/2 C melted butter
3 T sugar
1/2 t cinnamon
1 lemon
8 oz cream cheese
1/4 C powdered sugar
2 1/2 C coarsely chopped strawberries
Optional: 1 1/2 C toasted almonds
Slice bread 1/4 inch and brush with butter and sprinkle with sugar mixed with cinnamon. Toast in a 375 degree oven for 12-14 minutes or until golden brown.
Zest rind from one lemon and squeeze 2 tsp juice and add to cream cheese. Add powdered sugar and whisk.
Spread cream cheese mixture on toasted bread and top with strawberries.
Optional: Top strawberries with more lemon zest, toasted almonds, or a sprig of mint.

Layered Lemon Lush Dessert
Crust:
1/2 C chopped pecans
1 cup flour
1/2 C butter (room temp)
1/4 C brown sugar
Mix together and press in bottom of 9x13 pan. Bake at 350 for 15 minutes.
Middle:
1 C cool whip
8 oz cream cheese (room temp)
1 C powdered sugar
Mix and spread over cooled crust.
Top:
Mix 2 small packages instant pudding (any flavor) with 3 cups milk and spread over cream cheese layer. Top with another cup of cool whip, sprinkle with toasted coconut and chopped pecans.
