Summer Squash Ribbons & Creamy Tomato Sauce

Got Zucchini?  Vegetable gardens are great!—and such an important part of food storage. Don’t forget to store some extra seeds in a cool, dark, and dry place. 


Summer Squash Ribbons &Creamy Tomato Sauce
2 t olive oil
½ t minced garlic
2 large tomatoes, diced small or even crushed, or a 14 oz can diced tomatoes
2 or 3-or more-small (about 6 inch) zucchini or yellow squash, peeled into strips with a vegetable peeler.
Italian seasoning w/ parmesan (like Johnny’s garlic spread & seasoning from Costco, or just some shredded parmesan and Italian herb seasoning)
About ½ C cream (use more or less as desired)
Cooked pasta

Saute garlic in olive oil for a minute.  Add diced tomatoes and squash.  Cover and let cook a few minutes until squash is tender. Stir in cream, then add Italian seasoning and salt & pepper to taste, then simmer a minute or two.  To make a meal, serve over your favorite pasta with some chicken on the side.
