Turn your nachos into a meal! Even my pickiest eater (o.k. 2nd pickiest) loves this—she says this is the only way I will get her to eat beans. This is also good on a fresh cooked tortilla with a little cheese—try pepper jack or buffalo wing cheddar for those who like it hot!
1 can refried beans
½ C sour cream
½ C salsa
1/8 - ¼ t beef bouillon to taste
Combine all ingredients in a medium saucepan (no need to measure sour cream & salsa—just estimate-you really can’t mess this up). Heat and blend with an immersion blender till smooth (or blend everything in a blender.) We like this served warm.
*Remember, the church now suggests getting a 3 month supply of food that is part of your normal daily diet, in addition to a 12 month supply of basic foods. If your family eats a lot of tortilla chips, consider storing 3 month’s worth. Canned beans and salsa of course would be great storage items.
